Fully ripe cherries are selected from high altitude areas in Yunnan where the growing conditions naturally support aromatic complexity and sweetness.\u003c\/p\u003e\n\u003cp data-start=\"2015\" data-end=\"2383\"\u003eThe coffee undergoes a carefully controlled anaerobic honey fermentation using selected yeast. Temperature and humidity are closely managed throughout the process to guide flavour development with precision. Once fermentation is complete, the coffee is sun dried on raised beds for around two weeks, allowing time, light, and airflow to gently shape the final profile.\u003c\/p\u003e\n\u003cp data-start=\"2385\" data-end=\"2643\"\u003eThe result is a coffee that is remarkably clean and expressive, with lifted floral aromatics, soft citrus brightness, and a lingering honeyed sweetness.
