Acquired approximately seven years ago and planted with Geisha and Java varieties, the farm reached its first commercial harvest in 2025. The shaded environment slows cherry maturation, extending the growing season and allowing flavour development to occur gradually. This slower ripening contributes to the remarkable clarity, complexity and elegance found in the cup.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eFor this lot, only fully ripe cherries are selectively harvested before being depulped and lightly fermented. The coffee is then washed and dried slowly in traditional \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003eGuardiolas\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e, mechanical dryers operated at a remarkably low temperature of \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003e40-50°C for 60-70 hours\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e.
