until her son, Jimmy Gomez, became a coffee taster that Marleny
began to focus on specialty coffee production.

For this lot, cherries were handpicked by Marleny’s team and
exposed to anaerobic fermentation for a period of 26 hours. The
fermented cherries were pulped and washed before being placed
on raised beds for 18 days until 10.5% moisture content was
achieved.
