Coffee here is grown using traditional methods without chemical fertilisers or pesticides, in a country with a fascinating coffee heritage stretching back to the development of the \u003cstrong\u003eHybrid of Timor\u003c\/strong\u003e in the 1920s. \u003cspan class=\"contents\"\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eThe cherries are processed through the \u003cstrong\u003eRailaco Mill\u003c\/strong\u003e, which has operated since 2008 and works with around \u003cstrong\u003e800 farmers through 25 local agents\u003c\/strong\u003e. The mill employs more than 230 people and also returns organic waste from coffee processing to producers for use as fertiliser. \u003cspan class=\"contents\"\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003chr\u003e\n\u003ch2\u003e\u003cspan role=\"text\"\u003e\u003cstrong\u003eAbout the Lot\u003c\/strong\u003e\u003c\/span\u003e\u003c\/h2\u003e\n\u003cp\u003eThis award-winning micro-lot goes through a particularly interesting \u003cstrong\u003eDouble Anaerobic Natural\u003c\/strong\u003e process.\u003c\/p\u003e\n\u003cp\u003eAfter harvesting, the cherries are washed and density-sorted before undergoing an initial \u003cstrong\u003e24-hour anaerobic fermentation\u003c\/strong\u003e. They're then slowly dried for three days before being returned to an anaerobic environment for a further \u003cstrong\u003e48 hours\u003c\/strong\u003e. \u003cspan class=\"contents\"\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eThe cherries then complete a long \u003cstrong\u003e20-22 day drying period\u003c\/strong\u003e, finishing at around 12% moisture.
