Huila is currently the largest producer of specialty coffee in Colombia by volume.
The municipality of Algeciras, located centrally, on the eastern border that Huila shares with the department of Caquetá, is the municipio of Algeciras.
Daniel Calderon Enciso is one of an impressive handful of partner producers that Azahar work with in Algeciras
where the main economic activity is agriculture and the main crops cultivated—besides coffee—are sugar cane, cacao, and some leafy greens.
Daniel’s finca El Mirador sits at an altitude of 1,760 m.a.s.l. and spans a total of six hectares of which almost three are planted in coffee.
This lot is made up of the Colombia and Caturra varieties, both emblematic arabica varieties found throughout Colombia.
After the cherry was hand-selected at its peak moment of ripeness, the harvest is weighed, washed, and left to ferment intact for a period of 130 hours.
The next stage in the post-harvest processing is to put the fermented cherry into a marquesina, a raised bed drying system inside a parabolic greenhouse.
Like most of our allied producers, Daniel too has seen the profound impact the heavy rainfall over the last two years has had on his production as well as on his drying times, which was 40 days for this micro lot.
Caturra produces more coffee and is more resistant to plant diseases than Bourbon.
