Koji Fermentation
-The coffee cherry is harvested only with a high level of ripeness.
-The coffee is washed, and put in barrels and then immersed in water and at that time is inoculated with Koji.
-The barrels are uncovered for 24 hours in a relatively high humidity place so that the fungus can proliferate.
-The coffee seeds will become completely white with Koji Fungus after 2 days.
-Coffee is then dried for 21 days in African beds.

Kōji mould, is a filamentous fungus used in East Asia to saccharify rice, sweet potato, and barley in the making of alcoholic beverages
such as sake and shōchū, and also to ferment soybeans for making soy sauce and miso.

About the producer
Delmy Hernandez is a third-generation coffee farmer. Together with her son – Moises Hidardo Hernandez they operate Finca Las Cascaritas.
They grow several coffee varieties such as Parainema, Catuai, Bourbon, and Obata.
The farm sits on hilly and tree-covered terrain covering 3.5 hectares at altitudes1230 MASL to 1300 MASL.
The diversity of plant life includes pine trees native to the region, as well as banana, American walnut and hazel pine.
In addition to natural, honey, and washed specialty coffees, Moises Hidardo started to work on experimental microlots in 2015 to explore the possibilities of developing unusual cup profiles.
Using non-traditional processes on lesser-known varietals has led him to produce coffees with pronounced fruity and winey notes that would appeal to consumers with more adventurous preferences.
