The captivating views in the high elevation (2,100 masl) of the southern region of Ethiopia,
the Dhega coffee variety grows in red-brown fertile soil under shade trees, in a superb growing condition known for producing a classic Yirgacheffe coffee.
This coffee is harvested by smallholder farmers and processed at the family-owned Gizaw washing station.
Around 500 growers in the village handpick the red cherries harvested from the high elevation hills into the nearby washing station for processing.
The ripest cherries delivered to the wet mill are sorted and then placed on raised African beds;
coffee is shaded between 12-3 pm and rotated for steady drying until it reaches 11.5% in around 20-30 days.
Finally transported to Addis Ababa for sorting and grading, where defects are cleaned and bagged to ship to Australia in Gizaw's dry mill
Once carefully removed from the tank, the coffee is dried slowly for 20-25 days on African drying beds in the full sun.
