Origin Story

This unique micro lot is made out of the prized Kenyan variety – SL28.
It was then fermented and inoculated with Levain yeast, the same used to make sourdough, and dried the natural process way.

Santuario do Sul farm is a project that was born in 2017 from a goal of being ahead of market trends.
It was not easy to begin planning when the plans were to bring coffee from different regions of the world in order to generate a new profile of Brazilian coffee.
The coffees grown at the farm are the result of a lot of obstinacy of Luiz Paulo and his partners, Today, in addition to the traditional Brazilian varieties (like Yellow Bourbon),
the farm produces more than thirty exotic varieties of coffee, using differentiated cultivation practices (such as shaded areas), and innovative processes.
The Santuario do Sul farm is next to one of the most traditional farms located in the municipality of Carmo de Minas, named Irmas Pereira.
This is where Santuario do Sul’s green coffees are processed.

Very carefully, the varieties planted there are monitored closely, so they can be able to offer the best results within the climatic conditions of the region.
In addition, Luiz Paulo himself makes sure to always taste the first samples of each of these coffees, to guarantee the quality of their products.
For the next few years, Luiz Paulo has no doubts:
“The goal is to always be at the forefront of the market and offer more and more quality!
So far, the farm has acquired some special positions on the market, being recognized by the quality and the pioneerism.
The first two harvests started with the new varieties and processes, which was important to make the new flavours recognized by the customers and the judges."
