Background Information
This lot comes from a 120-hectare farm in the heart of Gedio, sitting at a lofty 2050–2100 metres above sea level—prime conditions for developing sweet, dense cherries. While Yirgacheffe is globally renowned for its washed coffees, the producers at Worka Sakaro are pushing boundaries with carbonic maceration—a technique borrowed from the wine world and relatively new to the region.
In this meticulous process, freshly picked cherries are sealed inside stainless-steel fermentation tanks. Over 10 days, they undergo anaerobic fermentation in a carbon dioxide-rich environment, allowing the natural sugars and fruit flavours to soak deep into the beans. The longer fermentation time—double the standard—results in an intensely fruity profile that’s rich, layered, and incredibly juicy.
Post-fermentation, the cherries are slowly dried on raised African beds for 20–25 days, locking in complexity while ensuring even, stable moisture content. This extended drying, combined with the unique fermentation, gives Worka Sakaro its signature funk and fruit depth.
