About Project One Light

Project One Light is a specialty coffee processing project based in the heart of Yunnan, founded in 2021 by Olina Cai. With a background in both specialty coffee and tea, Olina and her team bring a thoughtful, quality driven approach to every lot they produce.

The POL team is made up of Q graders and processing specialists who place strong emphasis on ethical practices, environmental care, and consistency. Their work focuses on improving Yunnan coffee year after year, while sharing that journey openly with the global coffee community. Every decision is guided by respect for the people behind the coffee and a long term commitment to sustainable quality.

About the Coffee

Blue Iris is a shining example of Project One Light’s philosophy that processing should elevate what already exists, not mask it. Fully ripe cherries are selected from high altitude areas in Yunnan where the growing conditions naturally support aromatic complexity and sweetness.

The coffee undergoes a carefully controlled anaerobic honey fermentation using selected yeast. Temperature and humidity are closely managed throughout the process to guide flavour development with precision. Once fermentation is complete, the coffee is sun dried on raised beds for around two weeks, allowing time, light, and airflow to gently shape the final profile.

The result is a coffee that is remarkably clean and expressive, with lifted floral aromatics, soft citrus brightness, and a lingering honeyed sweetness. This year’s Blue Iris is more refined and confident, offering a cup that feels both celebratory and calm.

Blue Iris has quickly become a seasonal favourite for us, and we are proud to share its return for a second year. Elegant, floral, and beautifully balanced, this rare filter release is our way of welcoming the Lunar New Year with something truly special.

For Filter/Batch Brew, we suggest 1:16 coffee to water ratio as a starting point.

All pours are 30 second intervals
1st pour of 30g, followed by 3 pours of 70g
