Brim coffee is sourced from the picturesque Da Lat region in Lam Dong Province, Vietnam. Nestled at an elevation of 1600 meters above sea level, this region provides the ideal conditions for cultivating exceptional Catimor coffee. The fertile soil and unique microclimate contribute to the distinct characteristics of this remarkable coffee.
For this micro lot, Brim Coffee House worked closely with ethnic minority farmers who carefully hand pick and hand sort red, ripe coffee cherries. These cherries then undergo a natural sun-drying process on hand-woven bamboo nets for approximately 30 days. The natural processing method, combined with the careful selection and handling of the cherries, ensures that the coffee maintains its fruity and complex flavour profile.
This collaboration between Brim Coffee and Offshoot Coffee is particularly special, as it brings together long-lasting friends and coffee enthusiasts Tony Bui Nguyen, aka @barista_kid from Brim, and Rummy Keshet, the head roaster at Offshoot. Both Tony and Rummy share a deep passion for showcasing Vietnam as an emerging specialty coffee-producing country, and they are excited to finally release this exceptional coffee to the world.

Selection, washing, and floating of the coffee cherries are especially important as the whole fruit remains on the beans during the drying process. The main challenge in producing naturals, especially Arabica, in Vietnam's climatic conditions is the high rainfall and humidity during the harvest season. Brim Coffee ensures that coffee is properly moved on the beds with adequate air circulation multiple times a day, particularly during high humidity periods, to prevent uncontrolled fermentation and mould development.
From the good natural process, you can expect fruity qualities, complexity, and an intense aroma. Brim Coffee's meticulous process results in clean, vibrant, and memorable flavours.
