Fermentation & Processing
This distinctive lot begins with hand-selected cherries grown at 1650 masl in the Da Lat highlands. After an initial anaerobic washed process to remove the mucilage, the coffee undergoes a 100-hour co-fermentation with dried lavender flowers in a sealed, oxygen-free environment. The floral character from the lavender is gently infused into the beans without overwhelming the natural depth of the Catimor.

Following fermentation, the coffee is dried slowly on raised beds for 10–15 days, allowing clean airflow and gradual moisture reduction to enhance clarity and cup stability. The result is a refined yet characterful filter coffee with layered sweetness and a graceful, floral lift.

Sourced from the fertile volcanic soils and cool climate of Da Lat in Lam Dong Province, this coffee reflects Brim Coffee’s mission to redefine Vietnamese specialty coffee.
