What makes Chocoloco even more meaningful is its origin story: it represents the collective work of farmers in Huila and Tolima, united under Cata Export’s mentorship. This collaboration ensures that coffees once overlooked are now recognised for their excellence, giving smallholders a stronger footing in the specialty landscape.
About This Lot
Chocoloco is processed through a carefully monitored anaerobic washed protocol. After meticulous cherry selection, the harvest undergoes 70–80 hours of anaerobic fermentation in sealed tanks, followed by a gentle wash and controlled drying for 5–10 days. The result is an espresso that’s clean yet adventurous, marrying classic structure with an almost confectionery intensity.
Expect a cup that surprises and delights: boozy banana richness, fizzy cola spice, and chocolatey depth, tied together in a way that makes this one of the most distinctive espressos on our menu right now.
