This lot was produced at the Danche washing station in Chelbesa, working closely with 915 smallholder growers from the nearby villages of Chelbesa, Danche and Kubi. These producers farm tiny plots not only of coffee but also food and other cash crops, making coffee both a livelihood and a way of life. Their careful attention to cultivation and picking ensures high-quality cherries that form the backbone of Danche’s reputation.
About This Lot
Hydro Honey is a unique and innovative processing style that enhances both clarity and fruit depth in the cup. The cherries are hand-selected for ripeness at above 20 Brix, then sorted mechanically and floated to remove any underripes. After 48 hours of shaded pre-drying, the cherries are placed into tanks quenched with water for a two-stage fermentation: 48 hours anaerobic followed by 48 hours aerobic.
After fermentation, the cherries are carefully dried on shaded raised beds for around 25 days. The outcome is a coffee with tropical brightness, jammy sweetness, and a floral lift, all presented in a clean and expressive structure.
