INVERFINCA, founded by Fernando Alfaro and Jose Enrique Gutierrez, embodies four generations of Salvadoran coffee expertise. Their farm, Finca El Guamo, sprawls over 45 hectares at 1,200 meters in Tacuba, Apaneca-Ilamatepec, nestled between protective mountain ranges and adjacent to Parque Nacional El Imposible. This strategic location fosters an ideal microclimate for specialty coffee cultivation. Alongside Caturra, they cultivate Pacamara, Anacafe 14, Sarchimor, and Bourbon varieties. Workers carefully handpick ripe, red cherries, processing them onsite. At the wet mill, cherries undergo visual sorting to remove any defects, with only the finest cherries selected for sun drying on raised beds. Regular raking ensures uniform drying over 23 to 27 days. This arduous process ensures the highest quality coffee, driven by Fernando and Jose Enrique's deep-rooted passion for excellence and their commitment to their Salvadoran coffee heritage.
