About the Producer
Ernelio Ortiz owns and manages Finca El Pedrero, a 12-hectare farm in the mountainous Montecillos region of Honduras.
Almost the entire property is dedicated to coffee, with approximately 56,000 trees, predominantly Catuai and IHCAFE 90. Smaller sections of the farm are also planted with avocado trees.
For Ernelio, coffee farming is much more than a livelihood. He credits coffee with improving his family's quality of life and believes that caring for the environment has been fundamental to producing better-quality coffee and achieving better prices.
It's a straightforward philosophy, but one that continues to shape the way he manages his farm.

About the Lot
This Catuai is grown at 1750 masl, where the cooler mountain climate of Montecillos provides excellent conditions for coffee cultivation.
Ripe cherries are handpicked and depulped on the same day before undergoing 12–24 hours of fermentation. The coffee is then thoroughly washed to remove the remaining mucilage and dried on patios or raised beds for approximately 15 days, depending on weather conditions.
The washed process brings out the coffee's natural sweetness while keeping the cup clean and balanced.
Expect Dried Fruit richness, comforting Brown Sugar sweetness and a juicy Currant finish.
