Background Information
Sidra is an exotic hybrid thought to originate from Ecuador, believed to be a cross between Ethiopian Landrace and Bourbon. Though its exact history is debated, its unique flavour potential has been recognised globally. Sidra is known for vibrant acidity, floral aromatics, and tropical fruit character, thriving best at high elevations between 1500 to 2000 masl.

We first tasted Sidra in 2017 and were stunned by its potential. By 2019, it was planted at Jardines del Eden, and is now also cultivated at Jardines del Encanto. The combination of genetics, terroir, and processing elevates this lot to something truly rare and expressive.

Processing Details
Harvested cherries are hand-picked at peak ripeness and transported in the early morning hours to La Pradera, Cofinet’s processing centre. After flotation to remove low-density beans, they undergo a 45-hour aerobic fermentation. This technique brings out the coffee’s intrinsic flavours without overwhelming them.

Drying happens slowly on raised beds over 8 to 12 days. Cherries are carefully turned and monitored to prevent defects, allowing sugars and flavours to deeply infuse the bean. The result is a cup that is incredibly sweet, full-bodied, and bursting with fruit.

Felipe Arcila - Sidra is a filter coffee that reflects precision, origin, and innovation. It’s the kind of cup that lingers long after the last sip.
