About the Farm

Finca Noruega is a 25.2 hectare farm founded in 2017 by Los Naranjos Coffee and located near Apaneca in El Salvador. The farm forms part of the Renacer Project, a development initiative focused on improving quality among small and medium producers.

Despite challenges such as leaf rust and climate variability, the team invests in detailed soil analysis and targeted nutrient management. Weed control is done manually without chemical inputs, and water and soil conservation are prioritised across the farm. Their dedication to quality has earned recognition in multiple Cup of Excellence programs, reinforcing Apaneca’s reputation for exceptional coffee.

About the Lot

This Red Bourbon underwent a carefully monitored anaerobic natural fermentation. Fully ripe cherries were sealed in tanks for 72 hours, with pH and sugar levels observed closely to maintain balance and clarity.

After fermentation, the cherries were dried slowly on raised beds for 30 to 40 days until reaching 10% moisture. The high altitude and cool mountain air allow for gradual drying, preserving structure and sweetness.

As espresso, the result is bold yet refined. Ripe red grape notes meet a bittersweet Aperol character, wrapped in a dense, chocolate ganache body. A natural that delivers depth without losing elegance.
