Gutity sits within the Kochere district, one of the most prized microzones of the greater Yirgacheffe region. This area is known for its reliable harvest weather: dry days, cool nights and very little rainfall during the peak ripening months. These conditions are ideal for natural processing and help explain why Ethiopia continues to produce some of the most balanced and fruit expressive naturals in the world.
For this lot, cherries were grown as classic garden coffee across small family plots, then hand selected at 20 to 22 Brix. The fruit was placed into sealed tanks and flushed with CO2 to remove oxygen, allowing tightly controlled anaerobic fermentation. Temperature, humidity and yeast activity were monitored throughout, shaping the cup’s perfumed tropical profile.
Drying took place in thick layers to slow moisture loss and develop texture, taking around 25 to 30 days before reaching the ideal moisture content. The beans then rested inside the dried cherry husk to deepen sweetness before final milling and export.
The result is a CM Natural bursting with lychee vibrancy, deep purple Kyoho grape and a wine gum sweetness that glows with clarity.
