About the Producers
Half of this blend comes from Jairo Arcila’s washed Castillo lot grown at Santa Monica, Armenia. Using a washed process guided by wine yeast, this component brings the crisp green apple edge, clean structure and bright acidity.
The second half comes from Alto Palomar in Chanchamayo, Peru. Grown by smallholder producers across high mountain valleys, this washed Caturra and Typica adds smooth texture, gentle sweetness and a soft white grape character.
Both coffees are meticulously sorted, floated and washed before being slowly dried on raised beds for stability and clarity.
