Background Information
This exceptional lot hails from the fertile highlands of Uraga, in the Guji zone of Oromia, where coffee is grown at elevations between 1900 and 2120 masl on a 200-hectare farm. Here, altitude, climate, and terroir converge to create conditions ideal for cultivating landrace varieties known for their aromatic complexity and clarity.

What makes this release so special is its natural anaerobic wine processing—an innovative fermentation method introduced to the region in 2020. Once the ripest cherries are meticulously hand-sorted, they are sealed in stainless-steel tanks that allow carbon dioxide to build and displace oxygen, creating a pressurised, oxygen-free environment.

This fermentation lasts 4 to 5 days, during which the CO₂ pressure forces the sugars and acids of the fruit mucilage deeper into the coffee bean, intensifying the flavour complexity. Once the cherries develop a golden yellow hue, they are removed and slowly dried on raised African beds for 15–18 days under the full sun.

The result is a deeply layered coffee that balances rich body, fruit-forward vibrancy, and a decadent, dessert-like sweetness—perfect for espresso lovers seeking something bold, unique, and exquisitely refined.
