Heart of the Wind is produced by a small group of highly experienced farmers in Apia, Risaralda, Colombia. Nestled at an altitude of 1700 to 1900 meters above sea level, this region offers the perfect environment for cultivating exceptional coffee. This micro-regional coffee, with a score of 85 points, showcases the dedication and expertise of the farmers who process it to exalt its unique characteristics.
The double fermentation process is key to achieving the clean, bright, and expressive flavours of Heart of the Wind. This technique involves an initial fermentation of the coffee beans for 24 hours after picking, followed by pulping and a second fermentation in tanks for another 24 hours. This meticulous process results in a cleaner, brighter, and more intense coffee with lasting and pleasant tasting notes.
Once the fermentation process is complete, the coffee is fully washed, and floaters are removed. It is then dried on patios and marquees until it reaches the desired moisture content of 10 to 12%, a process that takes approximately 12 to 15 days.
