About Iris Estate

Finca Iris Estate is a pioneering project born from three visionary coffee professionals who share a single purpose: to push the boundaries of flavour, sustainability, and transparency. They believe that truly exceptional coffee begins with living soil, thriving ecosystems, and mindful innovation. Situated in the lush highlands of Volcán, the farm integrates its coffee trees naturally within the surrounding forest, preserving biodiversity while cultivating some of the world’s most celebrated varieties such as Geisha, SL28, and Ethiopian heirlooms.

Every aspect of Iris Estate is guided by three core pillars:

Flavour as a reflection of terroir, capturing the essence of the land in every cup.

Sustainability, nurturing both soil and community for generations to come.

Connection, bridging producers and coffee lovers through shared knowledge and transparency.

Processing – Precision Meets Purpose

The Aril lot exemplifies Iris Estate’s signature approach to processing – scientific precision with a deep respect for nature. Ripe cherries are harvested at 20–22° Brix, hand-sorted twice, and sealed in stainless tanks filled with carbon dioxide to eliminate oxygen. This controlled CM (Carbonic Maceration) fermentation encourages a gentle transformation, enhancing the coffee’s natural fruit sweetness and floral complexity.

After fermentation, the cherries are pulped and washed, then dried for 20–25 days on multi-tiered raised beds inside a temperature- and humidity-controlled drying room. Every variable – airflow, heat, and timing – is adjusted to ensure an immaculate, refined flavour profile. Once dried, the beans rest in parchment within GrainPro bags, stabilising for perfect balance before export.

A Glimpse into the Future of Coffee

Iris Estate stands at the frontier of what coffee can be – an intersection of art, science, and ecology. Every decision on this farm, from soil management to fermentation gas composition, serves a singular goal: to honour the land while unveiling flavour in its purest form.

This Geisha from Iris Estate is not just a coffee, but a moment of beauty and innovation captured in a cup. It’s our privilege to share it with you.
