About the Variety
Papayo originated as a natural mutation in San Adolfo, Huila, where local farmers discovered its elongated beans resembling the shape of a papaya fruit. Though it shares some physical resemblance to Pacamara, Papayo is celebrated for its floral sweetness and complexity that often draw comparisons to Gesha.

It is what Cofinet call a “silver bullet” variety—combining exceptional agronomic resilience with extraordinary flavour. Compact in size, highly resistant to rust and drought, and producing high yields, Papayo provides both economic benefit for farmers and remarkable cup quality for drinkers.

About the Process
Jairo Arcila and his team of pickers carefully selected only the ripest cherries before transporting them to Santa Mónica’s sorting area. From there, the cherries underwent a 30-hour underwater fermentation, a precise step that develops delicate balance and clarity in the final cup. After pulping, the mucilage was thoroughly washed away using a recycled-water system that is treated and filtered to avoid contamination, ensuring sustainable water management.

The coffee was then dried on raised beds under greenhouse conditions until reaching 9.5–11% moisture content, carefully monitored for consistency and quality. This processing preserves Papayo’s distinct flavour, resulting in a cup that balances bright acidity with a smooth, sweet finish.
