About the Producer
Jhonatan Gasca farms at Finca Bella Vista in Bruselas, Huila, continuing a deep family tradition of coffee growing while pushing firmly into the world of specialty coffee. His journey has been shaped by persistence, curiosity, and a desire to move beyond volume-driven production into quality-led farming. Through years of experimentation and learning, Jhonatan has become known for bold, modern flavour profiles and meticulous post-harvest work.
His dedication has seen his coffees used in high-level barista competitions around the world, earning recognition not just for flavour but for consistency and precision. Today, Jhonatan and his brother Johan continue refining their processes, building a reputation for standout lots that balance innovation with clarity.
About the Lot
This Pacamara is processed using a Thermal Shock Natural method, designed to amplify fruit depth while maintaining structure and cleanliness. Ripe cherries are first oxidised anaerobically in sealed bags, followed by an extended anaerobic fermentation lasting up to 120 hours. A carefully applied hot water thermal shock then removes mucilage and stabilises the flavour compounds before drying begins.
The result is a coffee with remarkable concentration and polish. Expect layers of ripe cherry and grape-like sweetness, underpinned by dark chocolate depth and a long, satisfying finish. It’s bold without being heavy, expressive yet controlled, and a brilliant example of Pacamara handled with intent.
This is a rare filter release that rewards slow brewing and careful attention. A true statement coffee from one of Colombia’s most exciting producers.
