The coffee in this lot is sourced with microlot-level precision, giving it high traceability and a true representation of the varietal.
Colombia’s washed processing method, renowned for its clarity,
involves picking the coffee cherries at peak ripeness, depulping them the same day, and allowing a controlled open-air fermentation lasting 12–36 hours.
The coffee is then thoroughly washed to remove all mucilage before being dried on patios, in parabolic dryers, or mechanically.
This process enhances the coffee’s clean profile and ensures the distinctive qualities of the Sudan Rume varietal are front and center in your cup.
