This stunning lot comes from Finca La Quebradita, a family-led project based in the highlands of Huila, Colombia. The farm spans 18 hectares and is committed to varietal innovation—boasting an impressive line-up including Eugenoides, Bourbon Pointu, Java, and Sidra. Their ultimate goal? To transform the entire farm into a varietal-focused haven for exceptional quality.
Sidra, a relatively new and enigmatic cultivar believed to trace back to Ethiopian landraces, stands out for its thick trunks, lush foliage, and tight, round cherries. Its potential for nuanced and vibrant flavour has made it a rising star in the world of specialty coffee.
What truly sets this lot apart is its intricate processing. After harvesting, only fully ripe cherries are selected. The coffee undergoes a multi-stage fermentation beginning with 16 hours in sealed containers, followed by a dry pulping. A thermal shock wash at 45°C then strips most of the mucilage while fixing volatile aromatics. This is followed by a second anaerobic fermentation for 36 hours at sub-25°C temperatures, before being dried over 76 hours at a steady 40°C.
The result? A crystal-clear cup with extraordinary fruit clarity, a juicy structure, and tropical aromatics that evolve as it cools. This coffee is an outstanding representation of Finca La Quebradita’s commitment to precision, innovation, and quality in every cup.
