Origin Story

Produced by Fabio Jr Caballero at La Salvaje in the mountains of Santa Ana, Honduras, this washed Geisha achieved 1st Place at the 2025 Honduras Cup of Excellence. Even more impressive, this was the farm's first full commercial harvest, marking an extraordinary beginning for a project that has been years in the making.

About the Producer

Fabio Jr Caballero represents the next generation of one of Honduras' most respected coffee-producing families.

His grandfather, Don Fabio Caballero, is a legendary figure in Honduran specialty coffee, with multiple Cup of Excellence victories and decades spent refining coffee production in Marcala. Over the years, the Caballero family has become recognised for producing coffees of exceptional quality while maintaining a deep commitment to environmental stewardship and long-term sustainability.

La Salvaje is Fabio Jr's own project. Acquired approximately seven years ago and planted with Geisha and Java varieties, the farm reached its first commercial harvest in 2025. To have that first harvest go on to win the Honduras Cup of Excellence is a remarkable achievement and a testament to both Fabio Jr's dedication and the extraordinary potential of the farm.

About the Lot

La Salvaje sits high in the mountains of Santa Ana at 1800 masl, surrounded by dense native forest and protected pine trees that create a cool and stable microclimate. The shaded environment slows cherry maturation, extending the growing season and allowing flavour development to occur gradually. This slower ripening contributes to the remarkable clarity, complexity and elegance found in the cup.

For this lot, only fully ripe cherries are selectively harvested before being depulped and lightly fermented. The coffee is then washed and dried slowly in traditional Guardiolas, mechanical dryers operated at a remarkably low temperature of 40-50°C for 60-70 hours. This controlled drying approach mimics the gradual drying of sun-dried coffees while providing consistency and stability throughout the process.

The result is an exceptionally refined washed Geisha showcasing bright Mandarin citrus, vibrant Raspberry sweetness and juicy Nectarine character. Elegant, expressive and beautifully structured, it is easy to see why this coffee stood above the competition.
