Background Information
La Sirena is a remarkable coffee produced by Alejandra Ramirez, a young and dynamic coffee producer from the municipality of Santuario in Risaralda, Colombia. Her farm, "La Sirena," sits at an ideal altitude of 1700 to 1800 metres above sea level, creating perfect conditions for producing high-quality coffees.
Alejandra oversees her family’s farms, where she grows various coffee varieties using different processing methods. She is also the founder of the brand "Zurcos," through which she sells her roasted coffee to both local and international markets. Alejandra is a prominent leader in the coffee industry and an inspiring figure for women in coffee from the Risaralda region.
The natural processing of La Sirena Geisha involves hand-picking only the ripest beans, followed by a meticulous hand-sorting process. The beans then undergo a dry fermentation for 72 hours inside tanks. After fermentation, the tanks are filled with water to remove floaters, ensuring only the best beans remain. The coffee is then dried on marquees for approximately 18 to 22 days until it reaches the desired moisture content of 10 to 12%. This careful processing results in a coffee that is both clean and flavourful, with a stabilised and enhanced profile.
