Background Information
The Las Flores Farm is a jewel in the heart of Acevedo, Huila, Colombia. Established in 1990 by the matriarch of the Vergara family, the farm has grown to span 14 hectares, with 90,000 coffee trees cultivated across its rich volcanic soils. At an altitude of 1730 masl, Las Flores produces coffee with exceptional clarity and complexity.

In 2006, Las Flores made its debut in the Cup of Excellence, sparking the family’s journey into specialty coffee. Over three generations, the Vergara family has honed their craft, experimenting with agronomic techniques and post-harvest processes to produce some of Colombia’s most distinguished coffees. Today, under the leadership of Edilberto Vergara and his son Johan, the farm is a leader in innovative practices, growing exotic varieties like Pink Bourbon, Java, and Wush Wush, and using fermentation techniques that push flavour boundaries.

The Anaerobic Thermo Shock process used for this Chiroso lot exemplifies their dedication to precision and creativity. This process enhances the coffee’s vibrant fruit notes, deep complexity, and silky texture, making it a standout for espresso.
