Background Information
This is Las Flores at its absolute best. A meticulous, boundary-pushing expression of Java—celebrated for its elegant structure and aromatic finesse—turned into a full-blown fruit symphony through one of the most precise and innovative processing techniques we’ve seen.
Everything begins with obsessive cherry selection: only ripe fruit measuring 24–26° Brix makes it through. Floaters are removed, cherries are disinfected with alcohol, and then the magic begins. The first step is a thermal shock with 55°C water to activate sugars and set the stage for deep flavour development.
Next, the coffee undergoes a 60-hour anaerobic fermentation in sealed tanks. Once that’s complete, oxygen is reintroduced for a 12-hour oxidation phase, with temperatures carefully raised to drive complexity. Then, the cherries are immersed in water for an additional 12 hours of submerged fermentation, with must recirculated throughout to enhance depth and nuance.
And then there’s the drying—handled with an insane level of precision. The lot is moved to a hermetically sealed stainless steel dehumidifier for what Jhoan calls Pristine Precision Drying, bringing the coffee down to 18% moisture. After a minimum two-week rest, it’s dried again with clinical control to reach 11.5% moisture and a water activity below 0.6%.
The result? A cup that would be right at home on the world stage.
