Located in Acevedo, Huila, this family-run farm is operated by the Vergara brothers, who have become pioneers in variety development and experimental processing. Their passion and precision have earned them accolades like a top-20 placement in the Cup of Excellence and international recognition for producing some of Colombia’s most exciting coffees.

This Rare Sidra showcases what happens when innovation meets obsession. The Sidra variety itself is a standout: high-yielding, large-cherried, and genetically unique, offering dense sweetness and fruit-forward complexity.
At Las Flores, only cherries at peak ripeness—measured by brix levels—are selected. After a first 48-hour fermentation, the coffee undergoes a thermal shock at 50°C, followed by a second anaerobic fermentation using Saccharomyces cerevisiae T58 wine yeast for 80 hours. This infusion not only deepens complexity but builds layers of juicy acidity and refined sugar sweetness. The drying process is just as rigorous—mechanical and solar drying over 15+ days, followed by full quality control and stabilisation.
