Background Information
Las Flores, nestled in the lush hills of Acevedo, Huila, is no stranger to pushing the envelope in experimental coffee processing. Led by the Vergara family, this third-generation farm has become known for their obsession with detail, innovative fermentation techniques, and standout coffee varieties.
Tabi—meaning “good” in the Guambiano language—is a hybrid of Typica, Bourbon, and Timor, created for both disease resistance and cup quality. But what really elevates this coffee is the incredibly clean processing method.
After selective harvesting at semi-ripe stages, the cherries undergo a multi-stage fermentation process that includes oxidation and thermal shock. To preserve the fruit-forward character while eliminating over-fermentation, the team employs hot and cold water quenching, locking in delicate volatile compounds. The final drying stage—done using Pristine Precision Drying in stainless-steel dehumidifiers—ensures the cup’s clarity, complexity, and vibrant aromatic profile are fully preserved.
