About the Producer
Oscar Hernández was born in Colombia's Laboyos Valley and originally studied environmental management before serving in the Navy. Following the passing of his father, Oscar returned to Los Nogales and began transforming the farm into a centre for coffee innovation, bringing together technology, sustainability and a deep understanding of the land.
Today, Los Nogales forms part of a three-farm project alongside Finca Nahui and Finca Neblina, specialising in exotic coffee varieties. Inspired by time spent learning in Panama, the team introduced advanced drying techniques with precise control over temperature and humidity. Their approach brings together terroir, genetics and science, with the goal of improving quality while creating dignified employment and more responsible farming practices.
About the Lot
This Typica begins with selective hand-picking of fully ripe cherries. The cherries are floated to remove defects before being mechanically depulped and moved into an extended fermentation under controlled conditions, designed to enhance aromatic development and fruit clarity.
The coffee then goes through multiple washing stages to completely remove the remaining mucilage and stabilise the flavour profile. Finally, the parchment is slowly dried on raised beds under carefully controlled temperature and humidity until it reaches its optimal moisture level.
The extended washed protocol is designed around cleanliness, brightness and structure, and this particular lot takes those qualities somewhere wonderfully playful.
In the cup, expect juicy Berry Hi Chew, colourful Rainbow Skittles sweetness and a sparkling Grape Soda character. It's intensely fruit-driven, yet remarkably clean and structured.
