About Los Pirineos
Perched atop the Tecapa volcano mountain range between Berlín and Santiago de María, Los Pirineos is one of El Salvador’s most iconic coffee farms. Run by the Baraona family for over 134 years, the farm is renowned for its breathtaking landscape, meticulous processing, and relentless pursuit of quality.
The farm’s name comes from its resemblance to the Pyrenees mountain range, and standing on its plateau, surrounded by open sky and volcanic soil, it is easy to understand the sense of scale and possibility that defines this place. Los Pirineos has long been recognised by buyers, exporters, and cuppers as producing some of the country’s finest coffees, with consistent success in auctions and competitions.
Today, the legacy of the farm continues through Diego Baraona, who carries forward the work of his late father Gilberto Baraona, a towering figure in Salvadoran specialty coffee. Gilberto’s influence shaped not only Los Pirineos, but also the wider coffee community in El Salvador through education, innovation, and direct trade initiatives.
About the Lot
This Pink Pacamara lot is a testament to Los Pirineos’ mastery of washed processing. Only fully ripe cherries are hand picked at peak maturity, floated to remove defects, and pulped before undergoing a controlled dry fermentation of 10 to 14 hours under shade. After washing, the coffee is dried slowly on raised beds, benefiting from full daylight exposure and steady mountain winds that ensure even moisture reduction.
The result is a coffee that is polished and transparent, with gentle stone fruit sweetness, crisp orchard fruit character, and a subtle pandan like aroma that adds an unexpected and elegant twist. Balanced and composed, this is a filter coffee that speaks clearly of its volcanic origins and the care behind every step.
