About the Producer
Natanael Charis, better known as Natcha, has become one of Indonesia's most exciting coffee producers through his relentless pursuit of quality and innovation.
Working closely with producers across Indonesia, Natcha combines meticulous cherry selection with advanced fermentation techniques inspired by both coffee science and the wine industry. His coffees have gained international recognition for their ability to deliver bold and distinctive flavour profiles while retaining balance, structure and drinkability.
Beyond processing, he remains committed to supporting local producers, improving quality standards and helping showcase Indonesian coffee on the world stage.
About the Lot
For Lot 8, ripe cherries undergo 36 hours of carbonic maceration fermentation using red wine yeast and lactobacillus cultures. This controlled fermentation environment encourages complex flavour development while preserving sweetness and aromatic intensity.
Following fermentation, the coffee is carefully processed and dried to stabilise the flavour profile and lock in the vibrant fruit character developed during fermentation.
The result is a beautifully expressive cup showcasing juicy Honeydew sweetness, ripe Mango character and sparkling Pear Cider complexity. It is vibrant, tropical and incredibly moreish, offering another fascinating glimpse into the creative world of Indonesian coffee processing.
A bold and expressive release from one of Indonesia's most innovative producers.
Happy brewing and stay curious.
