About the Producer
El Diviso is the project of brothers Nestor and Adrian Lasso, alongside their friend Jhoan Vergara. What began as a family farm has evolved into one of Colombia’s most forward-thinking coffee ventures. Over the years, their coffees have gained international recognition, appearing in world-class competitions and showcasing the potential of Colombian innovation on the global stage.
Their collaboration with Cata Export has been instrumental, allowing them to refine advanced fermentation techniques while building direct connections with roasteries worldwide. Together, they have become a symbol of how young producers are reshaping specialty coffee – and ensuring a sustainable future for their communities.

The Process
This Sidra underwent a highly detailed double anaerobic thermo shock natural process. The cherries were carefully handpicked at peak ripeness, then oxidised and fermented through a series of controlled anaerobic and aerobic stages. A key stage is thermo shock, where cherries are immersed in alternating hot and cold water, controlling microbial activity and locking in flavour.
The result is a structured yet fruit-forward cup that balances Sidra’s natural tropicality with layers of sweetness and complexity. This is processing innovation at its finest, and a clear example of how precision can elevate coffee to new heights.
