About the Producer
Project One Light is a specialty coffee project based in Yunnan, founded by Olina Cai. With deep roots in both the tea and coffee worlds, the team brings a thoughtful, tea influenced approach to coffee processing. Their focus is on ethical practices, careful environmental management, and precise control throughout fermentation and drying, always aiming to elevate what already exists in the bean rather than masking it.
About the Lot
For Peach Oolong, fully ripe cherries are selected from high altitude farms in Mangshi before undergoing carefully controlled anaerobic fermentation. Temperature and humidity are tightly managed inside sealed fermentation vessels, allowing gentle flavour development with clarity and consistency.
Drying is carried out slowly on raised beds over around two weeks, using natural sunlight to stabilise sugars and aromatics. The result is a coffee with soft peach sweetness, delicate florals and a lingering oolong tea finish. Refined, soothing and incredibly drinkable from hot to cool.
Peach Oolong is a celebration of precision, restraint and balance. Rare, elegant and deeply comforting, it is a beautiful way to welcome the Lunar New Year and a coffee we are proud to bring back for another season.

For Filter/Batch Brew, we suggest 1:16 coffee to water ratio as a starting point.

Time : 2:15
All pours are 30 second intervals
1st pour of 30g, followed by 3 pours of 70g
*We use 1 cup Hario V60 Ceramic, our water is Reverse Osmosis 70ppm-100ppm
