Background Information
This extraordinary microlot comes from the heart of Acevedo, Huila, Colombia, an area known for its lush microclimates and exceptional coffee-growing conditions.

Grown at 1450–1500 metres above sea level and nurtured in a climate of 17–24°C, this Yellow Bourbon thrives under conditions that intensify its fruit clarity and structure.

Peñas Blancas is the newest processing station and experimental “playground” for one of our favourite producers—Jhoan Vergara, the visionary behind the legendary Las Flores farm.

With Peñas Blancas, Jhoan pushes the boundaries of processing innovation while maintaining the same commitment to clarity, precision, and expression that Las Flores is known for.

The processing is where this coffee truly shines.

Only the ripest cherries are harvested at over 22° Brix, then subjected to a thermal shock wash at 55°C, a step that both sanitises and activates the sugars and enzymes within the cherries.

After that, cherries undergo a 48-hour oxidation stage where the mosto (a fermenting juice-like solution from previous cherries) is recirculated to build complexity.

This is followed by 36 hours of anaerobic fermentation in lined bags, allowing deeper fruit integration and floral lift.

Finally, the coffee is dried carefully using both solar and mechanical methods, bringing moisture down to 11.5% to ensure long-lasting clarity and flavour stability.
