Background Information
Hailing from the iconic coffee region of Quindío, Sebastian Ramirez represents the fourth generation of his family to grow coffee—but his approach is far from traditional. Taking over the El Placer farm under challenging circumstances, Sebastian pivoted toward specialty coffee with ambition and passion. His journey from law student to one of Colombia’s most respected producers is driven by a relentless curiosity and love for the craft.
Today, El Placer is not just a farm—it’s a full coffee experience. With part of the land dedicated to diverse varietals and a restored 350-year-old hacienda serving as a guesthouse, Sebastian offers visitors a seed-to-cup journey steeped in heritage and innovation.
This lot is processed using a meticulous white honey method. After selecting only the ripest cherries (with 95% ripeness), the coffee undergoes 48 hours of anaerobic fermentation in 200L tanks at a stable 18°C with CO₂ injection. A slow, controlled canopy drying phase follows, combining immersion techniques and parabolic drying over 20+ days. The result is an expressive and deeply complex Geisha—layered, refined, and refreshingly tropical.
