Thageini - Amber is processed at the Thageini Wet Mill, part of the Aguthi Farmers Co-operative Society, a group of around 2000 producers who are deeply committed to quality, sustainability, and education. This particular lot is crafted through a carefully controlled carbonic maceration process—a rare approach in Kenya that focuses on flavour development through precision fermentation.
After harvesting, only the ripest red cherries (20–22° Brix) are sorted by hand before being placed whole in sealed tanks filled with CO₂, forcing oxygen out. Yeast, temperature and humidity are carefully controlled to guide an eight-day fermentation at ambient temperatures. This draws out beautifully intense citrus-blossom aromatics and caramel sweetness.
The cherries are then pulped, thoroughly washed, and dried thin on raised beds over 14 days, with constant rotation to maintain clarity and structure in the final cup.
