Background Information
This beautiful lot comes from the Adorsi Washing Station in the Tulise village within Yirgacheffe, Ethiopia. The station processes coffee from approximately 700 smallholder farmers who bring their cherries to be handled with care and precision. The cherries undergo the traditional Ethiopian processing methods, with some modern advancements such as extended fermentation times.
At Adorsi, only the ripest cherries are used, thanks to the use of float tanks that separate out any underripe or defective cherries. The cherries are then depulped and fermented for 72 hours, with the water being replaced every 24 hours, ensuring a clean and refined cup profile. After fermentation, the coffee is dried on raised beds, allowing the coffee to reach its ideal flavour potential.
The extended fermentation process at Adorsi Washing Station results in a coffee that is both complex and clean, showcasing the best of what Yirgacheffe has to offer. With bright notes of apricot, balanced citrusy lemon balm, and a sweet lingering finish of brown sugar, Tulise - Washed is a perfect representation of why we love washed Ethiopian coffees.
