About the Producer

Wilton Benitez is one of Colombia's leading innovators in coffee processing. At Granja El Paraiso 92, he blends scientific precision with meticulous farming to produce coffees that consistently challenge expectations. His work with controlled fermentations and Thermo Shock processing has established him as one of the industry's most influential producers, while always maintaining exceptional clarity and varietal expression.

About the Lot

Only perfectly ripe cherries are hand-picked before entering a carefully controlled 92-hour anaerobic fermentation. The coffee is then subjected to Wilton's signature Thermo Shock process, alternating hot and cold water treatments to lock in aromatic compounds and elevate flavour intensity. The result is a Gesha that beautifully balances vibrant tropical fruit, elegant florals and exceptional sweetness.
