-About This Lot-
This SL28 lot is a perfect fusion of Kenyan heritage and Colombian innovation. Cherries were handpicked and then subjected to a 92-hour anaerobic fermentation, allowing microbial activity to intensify fruit-driven complexity. After fermentation, the beans underwent Thermo Shock, a technique using alternating warm and cold water to both stabilise microbial behaviour and lock in volatile aromatic compounds.
The outcome is nothing short of breathtaking: a cup with layered clarity and depth, where the SL28’s classic fruit-forward structure is elevated into something rare, crystalline, and competition-worthy. Expect bright bursts of raspberry and ribena, balanced by floral elegance and a jelly-like sweetness that lingers.
